ผัดไทยเป็นอาหารที่ชาวต่างชาติรู้จักกันดีจนมีร้านผัดไทยเปิดที่ต่างประเทศ วันนี้ฉันจะมาเล่าประวัติของผัดไทยให้ทุกคนฟัง แต่ก่อน เราเรียกผัดไทยว่า “ก๋วยเตี๋ยวผัด”เนื่องจากใช้เส้นก๋วยเตี๋ยวซึ่งมีอิทธิพลมาจากประเทศจีน
PadThai, a dish many foreigners know is so well-known that there are PadThai shops opened aboard. Today I will tell you the history of PadThai. In the past, we call this dish “stir-fried noodles” as they use noodles with the influence of China.
สมัยสงครามโลกครั้งที่สอง เศรษฐกิจไทยไม่ค่อยดี ข้าวมีราคาแพง จอมพล ป. พิบูลสงคราม ซึ่งเป็นนายกรัฐมนตรีในขณะนั้นได้รณรงค์ให้ประชาชนรับประทานก๋วยเตี๋ยวแทนข้าว และได้เปลี่ยนชื่อจาก “ก๋วยเตี๋ยวผัด” เป็น “ก๋วยเตี๋ยวผัดไทย” หรือเรียกสั้นๆ ว่า “ผัดไทย” เพื่อบ่งบอกว่าเป็นอาหารไทย
During World War II, Thailand’s economy is not so good. Rice was expensive so PM Phibulsongkram who was the Prime Minister at that time encourage people to eat noodles instead of rice. and changed its name from stir-fried noodles to PadThai to include the Thainess (Nationalism era).
วัตถุดิบของเมนูนี้คือ เส้นเล็กที่ทำจากข้าวแล้วมาผัดกับไข่ไก่ เต้าหู้ และกุ้งแห้ง เสร็จแล้วโรยถั่ว และกินกับถั่วงอก มะนาว และ ต้นหอม ปัจจุบันนี้มีเมนูผัดไทยหลากหลาย เช่น ผัดไทยกุ้งสดที่ใส่กุ้งแทนกุ้งแห้ง ผัดไทยห่อไข่ รวมถึงผัดไทยเส้นต่างๆ เช่น เส้นจันท์ที่ดูเหมือนเส้นเล็กแต่เหนียวนุ่มมากกว่า หรือใช้วุ้นเส้น
The ingredient of this menu are small noodles made from rice and stirred with chicken eggs, tofu, and dried shrimps. Topped with peanuts once it’s done. You can eat with beansprout, lime, and spring onion. Nowadays there are many types of PadThai for example, Pad Tha with fresh shrimps, egg-wrapped PadThai or Sen-chan PadThai which is more chewing, or with glass noodles.

If you visit Thailand, you must try the original PadThai. The famous shop in Bangkok is PadThai Pisamai located around Pratupee in the old town. However, any PadThai shops are the same delicious. Do you like to eat PadThai? Kru Smuk really likes to eat PadThao.

Grammar Note: Time Connectors
In this story, I used many sentence connectors telling time such as in the past, at the period, in the present, etc. So I would like to give you examples how to use them.
วันนี้ (wan-níi) = today (at the beginning or the end of the sentence)
Examples:
- วันนี้ฉันไม่ไปทำงาน
(wan-níi, chãn mây-pay tham-ngaan)
= Today, I don’t go to work. - เรามีประชุมด้วยกันวันนี้
(raw mii prà-chum dûay-kan, wan-níi)
= We have a meeting together today.
แต่ก่อน (tàe-kòorn) = Before (in the past)
Examples:
- แต่ก่อนฉันเคยทำงานที่อเมริกา
(tàe-kòorn, chãn khuey tham-ngaan thîi America)
= Before I used to work in The States.
สมัย … (sà-mãy) = at the period of …
Examples:
- สมัยสงครามโลกครั้งที่ 2
(sà-mãy sõng-kraam-lôk kráng-thîi-sõong)
= At the period of World War II
ในขณะนั้น (nay khà-nà-nán) = at that time
Examples:
- … ในขณะนั้นฉันอายุแค่ 13 ปี
(nay khà-nà-nán, chãn aa-yúu khâe sib-sãam pii)
= … at that time, I was just 13 years old.
ปัจจุบันนี้ (pàd-ju-ban-níi) = In the present, nowadays
